Can you cut meat on Boos Block?
DO NOT cut fish or poultry on the butcher block work surface, unless you have thoroughly followed the instructions in step #1. The moisture barrier must be intact prior to cutting any type of fish, seafood, or poultry on the cutting board work surface.
What wood does Boos use?
The National Sanitation Foundation (NSF) approves maple for commercial kitchen use. John Boos is an example of a cutting board maker whose line of maple cutting boards are specifically certified by the NSF. Maple, and other woods are a safe option for inhibiting bacterial growth around food.
What do you put under Boos Block?
We recommend keeping the blocks oiled with Boos Blocks Mystery Oil or Board Cream. DO NOT JUST USE ANY TYPE OF COOKING OIL ON YOUR WOOD CUTTING BOARDS.
How often to clean Boos Block?
1. A minimum of once a month (depending upon the use and household conditions), apply an even coat of Boos® Mystery Oil to all surfaces of your wood cutting board using a cloth or disposable towel. Allow the Mystery Oil to fully penetrate through the wood fibers overnight, then wipe off any excess oil.

Should I oil my boos block before first use?
Provide a generous oiling right out of the package and before first use. Be sure to always coat all sides of the board when oiling. Use a clean cloth to apply the oil in the direction of the wood grain and allow the oil to soak in. Let it soak overnight & provide extra coatings if needed.
